Apple Pie Muffins

Easy, gluten free muffins that taste like your grandmas sweet apple pie!

RECIPE:
Dry Ingredients:
2 cups Almond Meal (Almond Flour)
1/2 cup Coconut Flour (or gluten free baking flour)
2 tsp Baking Powder
Himalayan Sea Salt – just a pinch
1.5 tsp Cinnamon
Wet Ingredients:
1/4 cup Coconut Oil (melted)
4 eggs (or flax eggs)
4 tbsp Raw Agave (or liquid stevia or Swerve Sweetener for zero sugar alternative)
1/2 cup Unsweetened Apple Sauce
1-2 small Apples
1/2 cup Pecans (or nuts of choice)
Crumble Topping:
Cinnamon
Coconut Sugar (or Swerve)
Coconut Oil
Pre-heat oven to 350 degrees.
Mix Dry Ingredient in a large bowl, combine well.
In separate small bowl, beat eggs and mix in rest of wet ingredients.
Add wet ingredients into large bowl with dry ingredients, fold until combined but do not over-mix.
Gently fold in apples and nuts.
Bake in pre-heated oven for 20-22 minutes – until golden brown on top.
Poke with tooth pick to make sure the inside is ready.
